Feta Pasta Bake

A quick and easy homemade pasta featuring feta, cherry tomatoes and spinach

Ingredients

  • 2 Cups Cherry or Grape Tomatoes *one 16 ounce container
  • 8 Ounce Block of Feta Cheese *found at Whole Foods, my HEB only had the Feta crumbles
  • 3-4 Tbsp Olive Oil
  • 1/2 Cup Dry White Wine
  • 2 Garlic Cloves Minced
  • 1/2 Tbsp Black Pepper
  • 1 Tbsp Herbs de Provence Seasoning
  • 1/2 Cup Fresh Spinach Washed and Dried
  • 12 Ounces Dry Pasta (About a cup and half)

Instructions

  1. In a 13x9 inch baking dish, place block of feta in the middle, add tomatoes around the feta. Add in olive oil, herbs de provence, black pepper, wine and garlic on top of the tomatoes and feta. Bake for 30 minutes at 400 degrees.

  2. While cheese and tomatoes are in the oven, prepare your pasta using the package instructions. Cook until al dente. Remove water and set aside.

  3. Once the feta and tomatoes are done, use a spoon to break up the feta and tomatoes stirring until you create an evenly mixed pasta sauce.

  4. Add pasta sauce to pasta and then add in your spinach. Serve warm.
