Fluffy Pancakes

Homemade pancake recipe which create thick and fluffy pancakes.

Servings 4 Large Pancakes


  • 2 Cups All Purpose Flour
  • 1/4 Cup Brown Sugar (Light or Dark)
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/8 tsp Salt
  • 1/2 tsp Cinnamon
  • 4 tbsp Salted Butter (melted)
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1 Cup Whole Milk
  • 1/2 Cup Heavy Cream


  1. Combine flour, salt, cinnamon, brown sugar, baking powder and baking soda. Whisk till combined.

  2. Add in egg, butter, milk, vanilla extract, butter and heavy cream. Combine with stand mixer or hand mixer, but careful not to over mix. This batter is thick so you will need more than a whisk. If you want to add any other mix ins like fruit or chocolate chips throw them in at this point. For this version, I added in sweet potato because I love it and needed to use some I had.

  3. Heat griddle or skillet to medium heat. Pour in 1/3 cup of batter on to heated skillet or griddle. Once the edges start to cook and the top bubbles flip over and cook for a few more minutes. Best served warm!
