More time in the kitchen brings about more food experiments! My new kitchen also brought more storage space allowing me to invest in some of the new popular kitchen gadgets, starting with an air fryer. Prior to the air fryer I really was not frying food on the regular. The mess, the popping grease and that smell! You’d smell it for days. An air fryer eliminated those issues so I racked my brain trying to think of what I would make and instantly remembered my mama’s fried potatoes! As a child this was one of her go to sides made with red potatoes and yellow onions on the stove top. I took her recipe up a notch and created the Air Fryer Fried Potatoes and Onions. Air Fryer Fried Potato and Onions
A traditional fried potato and onions recipe in an air fryer
Ingredients
- 1.5 Pounds Gold or Red Potatoes I prefer the small gold potatoes from Trader Joes.
- 1-2 Sprigs Fresh Rosemary
- 2 Tablespoons Olive Oil
- 2 Cloves Minced Garlic I recommend using a garlic press.
- 1/2 Cup Yellow Onion Diced
- 1/4 Cup Green Onion Do not worry about adding this if you do not have it.
Instructions

Rinse your potatoes in cold water removing the dirt. The skin will stay on these potatoes so the cleaner the better.

Cut the potatoes in to quarters or smaller if desired and place them in a mixing bowl.

Add in olive oil, green onion, yellow onion and garlic. Add in seasonings of your choice. I use pepper, salt, Tony Chachere's and herbs de provence. Stir everything ensuring each piece is seasoned.

Pour potatoes in to the air fryer basket taking care to lay them as flat as possible. Add sprigs of rosemary on top of the potatoes. Review your air fryer instructions for potatoes and/or fries. For mine, I set it at 400 degrees for twenty minutes. My air fryer is small, so I take them out at 10 minutes shake them up a bit to make sure all of the potatoes are cooked. When finished, they should all be nice and crisp!
Air Fryer Notes
I am super late to the air fryer party so pardon me while I catch up. I am reluctant to purchase additional appliances simply because they are trendy. We ALL had George Foreman grills like 15 years ago and if they had not made it to the Goodwill pile yet, I guarantee they are collecting dust somewhere. So I sat back and watched for years to see what the benefits were before deciding to purchase.
After about two weeks of having an air fryer, I definitely see the value. I’ve made these potatoes several times and have perfected chicken thighs in my air fryer as well. I am here to tell you that I am a converted doubter and encourage you to be jump on the bandwagon as well. I got my air fryer from Target, but it looks like it’s out of stock (here is a similar one on Amazon). However, the best deals can be found on Amazon and Best Buy. Also, make sure to purchase this nifty little olive oil sprayer so you can avoid using aerosol sprays with your air fryer. I am a 70 year old ‘white’ Canadian Grannie who has had my air fryer for 4 years. I use it all the time now, and have been making air fryer fried potatoes regularly…however it never occurred to me that by adding diced onion bits, that the potatoes would work and stay crispy.
