The older I get, the more I pay attention to the types of food I purchase and eat. The cheapest option may not always be the best and that super processed food we all grew up on is no longer the move. The hardest thing about this is stepping away from the brands you’ve known your whole life. When I think about apples for example, there are a couple of types that I grew up eating and I do not venture to far from those. So when the team over at Envy Apples offered to send me a package of Envy Apples I will admit I was skeptical on what difference I would see!
Envy Apples aims to create a better tasting apple that is naturally grown right here in the USA (and New Zealand)! These apples also brown slower because of naturally high levels of citric acid. So if you can get a better tasting apple that lasts longer without genetic modifications?? I call that a win!
I took those Envy Apples and did with them what I do best, BAKE! Apples and cinnamon go hand in hand for me, so with that in mind I created Apple Cinnamon Mini Bundt Cakes with a Brown Sugar Glaze! It is a delicious cake that truly highlights the flavors of the Envy Apples! Check out the recipe below.
Apple Cinnamon Mini Bundt Cakes
Apple Cinnamon Mini Bundt cakes featuring a brown sugar drizzle!
Apple Cinnamon Mini Bundt
- 2 Cups Dark Brown Sugar
- 1 Cup Unsalted Butter Softened
- 3 Cups All Purpose Flour
- 2 Tsp Baking Soda
- 2 Tsp Baking Powder
- 1 Tsp Vanilla Extract
- 1/2 Tsp Salt
- 2 Tsp Cinnamon
- 1/2 Tsp All Spice
- 3 Envy Apples Finely Chopped
- 1 Cup Whole Milk
Brown Sugar Glaze
- 2 Tablespoons Melted Butter
- 1/2 Cup Brown Sugar
- 1/4 Cup Heavy Cream
In a medium size bowl, combine dry ingredients (flour, cinnamon, baking soda, baking powder,salt and all spice). Whisk together and set aside.
Cream together the butter and brown sugar using a stand mixer or hand mixer.
Add apples and vanilla extract to the sugar mixture. Mix until fully combined.
Next, combine the dry ingredients in to to the sugar mixture. Slowly combine until fully incorporated.
Next add the cup of milk. Blend until fully combined.
Pour batter in to greased mini bundt cake pan.
Bake at 350 degrees for 25-28 minutes. Pans may vary, so be sure to check using a toothpick.
While the cakes cool on a cooling rack, combine together the Brown Sugar Glaze ingredients in a bowl. Whisk until the consistency allows a drizzle. If it is too thick add more cream.
Drizzle in the glaze on top of the bundt and serve!
The Envy Apples are great on their own, but definitely good for baking! For this specific cake, you can also make it in to a regular size bundt pan or two nine inch pans. I went with the a mini bundt pan which I highly recommend. The bundt cakes are like little cupcakes without all of the icing i.e. perfect!
