Summer is my FAVORITE season. Yes it is hot as hades in Houston, but summer brings out the best events, food and longer days to pack more fun in. For my family, summer means my dad will be hopping on the grill and my sister and I will head out to Cypress to chill on the deck while eating some good food. This summer, we have stepped it up a notch with some fun summer drinks to sip while chillaxing on the deck! Based on around the Barritt’s Ginger Beer, I created a delicious Pineapple Mule recipe which is perfect for the summer. Check out the recipe below!
A summery pineapple mule cocktail combining pineapple juice, Barritt's Ginger Beer and Vodka with a hint of lime.
- 1 Lime
- 1 Pineapple (for garnish)
- 3 Ounces Barritt's Ginger Beer
- 3 Ounces Vodka
- 6 Ounces Pineapple Juice I used Pineapple Mango Juice & it worked well!
Begin by slicing the pineapple to garnish your drinks
Next slice the lime in half to be used later
Mix in chilled Barritt's Ginger Beer, Vodka (of your choice) and Pineapple juice into cocktail shaker.
Squeeze a hint of lime into shaker before shaking.
Shake until well mixed.
Pour over ice if desired into a mule cup and sip away!
We loved the Barritt’s Ginger Beer so much, I used it in a mojito recipe a few weeks later! The recipe did not call for it, but we discovered that a splash of Barritt’s Ginger Beer gave the mojito a good kick. So you see, ginger beer works in more than just a moscow mule!
